Creamy Quinoa & Kumara Salad

Combine:

  • 1/2 cup of quinoa, cooked

  • roasted kumara

  • can of chickpeas, drained and rinsed

  • red onion, finely chopped

  • cooked corn chopped off the cob

  • avocado, chopped

  • big handful of finely chopped mizuna

  • juice of a lemon

  • 1/4 cup of cashew cream

  • celtic sea salt and pepper
