slow roasted tomatoes

Ridiculously easy, the bonus being that this plant based recipe freezes well too!


Preheat oven to 180 degrees Celsius, fan bake.

Place chopped tomatoes on a lined baking tray.


Sprinkle with 1-2 tsp coconut sugar, some Harker Celtic sea salt & ground black pepper.


Drizzle with coconut balsamic or balsamic vinegar & an optional glug of quality cold pressed olive oil.


Bake in the oven for at least 40 mins until caramelised.


Enjoy on toast, on rice cakes, blend to make easy pasta sauce, or have as a side dish.
