Hit the spot balls

Boom shaka laka laka as my children would say!

These balls are a crowd pleaser and help to get me off the chocolate/sugar addiction buzz.

My NOMO vegan Easter eggs got me craving sugar again like nothing else, so in the days following I have been using fruit, frozen medjool dates, cacao drinks by Seleno Health and spoonfuls of honey to get me back on track to good gut health (and thus good general health).

These balls are loved by all and are simple and cost effective to make. You can even take the sneaky opportunity to ā€œtrojan horseā€ some medicinal mushrooms or tonic herbs in there so the family reaps the immune boosting goodness ā€“ unbeknownst to them! Masonā€™s Mushrooms, astragalus and Qi are epic choices for autumn/winter.

So, here is the recipeā€¦

Ingredients

2 C dried dates, soaked in boiled water for 5 mins and drained

1 C almonds

1/2 C sunflower seeds

1/2 C pumpkin seeds

1 C desiccated coconut

1/4 C cacao or cocoa powder

1 tsp sea salt

2 tsp vanilla

Extra coconut for rolling (optional)

1 tbsp medicinal mushrooms (optional)

Method

Add everything bar the soaked dates to a high powered blender, food processor or Thermomix. Blend into a coarse flour. Add dried dates and blend until combined.

Roll into balls, toss in coconut, and freeze. See tips belowā€¦

Tips:

  1. Cut dried dates in half before soaking, as a pit in the mix ruins everything.

  2. As you roll them, place each ball into a mini muffin tray so they freeze separately then store in an airtight container/jar in the fridge or freezer.

  3. If you are time-poor make it into a slice instead by lining a dish with baking paper and pressing the mixture in, sprinkle desiccated coconut on top.
