Blueberry Pancakes
These wee gems got the big tick from the small fries of the household.
They’ve been on repeat lately and I tend to do double batches.
Never mind kids, I love standing at the stove flipping pancakes for half a morning!
Ingredients:
1 cup spelt flour or flour of your choice (I often blend up oats and make oat flour)
2 tsp baking powder
2 tbsp coconut sugar
Pinch of salt
1 tsp vanilla
1 cup milk of choice (I used homemade cashew + hemp)
1/2 cup frozen blueberries
Method:
Oil such as coconut for frying.
Add dry ingredients to a blender/food processor/bowl and stir, then add wet ingredients and gently combine.
Fold blueberries into the batter.
Fry with a small amount of coconut oil at a medium heat, turn when golden.
Serve with toppings of your choice. Can be frozen free-flow and added to lunchboxes.
